What is an infusion?

This is a technique for steeping plant-based ingredients (tea leaves, dried fruits, spices, etc.) in spirits to transfer the aroma, flavor, and color of the ingredients to the alcohol. Infusions of tea and coffee are well-known, but at ZEN TEA BREW, we use our own unique blend of ingredients based on Shizuoka-grown tea leaves to create craft cocktail flavors that cannot be replicated at home.

How many servings can be made with one kit?

When making Highballs (with soda water), you can make 13-14 servings. Each kit allows for 400ml of extraction, meaning approximately 30ml of spirits are used per drink.

If you prefer drinks with a larger serving size, such as on the rocks or neat, you can expect to make 8-10 servings.

Cost-effectiveness: ¥1,800 ÷ 13 servings = approximately ¥138 per drink.
Compared to craft cocktails at bars and restaurants (¥800-¥1,500), you can enjoy authentic flavors at home for a far more affordable price.

When can I drink it? Please tell me the approximate steeping time.

It can be consumed in as little as one hour. Extraction continues for up to 3 days (72 hours), and the changing taste over time is a unique pleasure of ZEN TEA BREW.

What should I do if I've brined it for too long?

After more than a week, certain flavors may become too strong depending on the ingredients. In particular, the Japanese sansho pepper in "Tochashi no Ichigeki Yuzu Green Tea Highball" will become more pungent and bitter if steeped for a long period.

In this case, you can stop further extraction by removing the tea leaves and ingredients from the bottle. Even if you remove them early, the flavors that have already transferred to the spirits will remain, so please rest assured.

How do you use ZEN TEA BREW's craft tea cocktail kit?
  1. Prepare Infusion
    Add 1 bag of Craft Tea Cocktail Kit and 375ml of spirit (gin, vodka, whisky, etc.) to a container.
    Infuse for 1 hour, then strain the spirit once the desired taste is achieved, and save for cocktails. (One kit makes 13-14 servings.)
  2. Mix Cocktails
    Use the infused spirit to make simple cocktails. No special mixers or complicated recipes are needed.
  3. Enjoy

About Spirits and Alcoholic Beverages

Do I need to purchase spirits separately?

Yes, you will need to provide the spirits yourself. The kit only contains ingredients for extraction, such as tea leaves, dried fruit, and spices.

We recommend an alcohol content of 40% or higher. The higher the alcohol content, the more efficiently the flavors, catechins, and aromatic compounds of the ingredients will be extracted (with 40% alcohol, the extraction efficiency is over 140% compared to typical methods).

You can also try using spirits you already have, and alternatives such as shochu with an alcohol content of around 25% are also possible. In that case, we recommend a longer extraction time.

Which sake should I use?

The recommended spirits for each flavor are listed below. However, these are merely suggestions, so please feel free to experiment with your favorite alcoholic beverages.

  • Tea Master's Yuzu Green Tea Highball → Gin, Vodka, Tequila
  • Strawberry and Rose Tea Afternoon Cocktail → Vodka, Gin, Rum
  • Adult Time Roasted Peach Oolong → Vodka, Gin, Whisky
  • Midnight Fig Smoked Cocktail → Whisky, Vodka
Does it have to be spirits (alcohol around 40% ABV)?

We recommend spirits because the effective ingredients in tea require an alcohol content of 40% or higher.
Other alcoholic beverages besides spirits, such as shochu, can also be used.

I'm not a fan of alcohol, but can I still enjoy the craft tea cocktail kit?

Certainly. It can also be enjoyed as an alcohol-free mocktail. Please refer to our non-alcoholic recipes for more details.

Storage and Quality

What's the best-before date?

Please check the product packaging for the expiration date of unopened kits. We recommend consuming spirits that have been opened or are in the process of being distilled within approximately one month if stored in the refrigerator.

Can I make a second extraction?

Although a second extraction is possible, the flavor of the ingredients will be less potent than the first. Please understand that it will not taste exactly the same as the first time. To enjoy the maximum flavor, we recommend using it for a single extraction.

What material is this kit made of? I'm concerned about allergies.

We use domestically grown organic tea leaves, dried fruits, spices, and konpeito (some ingredients are imported). All flavors are vegan and gluten-free. For specific ingredients, please check the "Ingredients" section on each product page or contact us.
